- 2 apples “Gran Smith” whole peeled and without heart

Preheat the oven and cover a tray with non-stick paper. Peel and cut the apples into squares and add the juice of a lemon and sugar so they do not rust. Let it rest.
To make the homemade brick paste, add it little by little and mix well the flour, salt, cinnamon and brown sugar and let the mixture rest for a couple of minutes. Stretch the very finite mass and make 10 medium rectangles (almost square) to make the rolls.
Paint the edges of each of the rectangles with the beaten egg with the help of a brush and put two tablespoons of the drained mixture, in the center of each of the rectangles. Now, fold the sides and roll the rolls.
Place the rolls on the tray and bake 15-20 minutes at a gentle temperature or until golden brown. In a small bowl, mix two teaspoons of cinnamon with a tablespoon of icing sugar. Paint each roll with a little oil and sprinkle over the mixture of cinnamon and sugar.

The cake can be bought at the supermarket or bakery, but we encourage you to do it at home.
- 3 eggs
- 3 tablespoons of sugar or sucralose
- 3 tablespoons of flour
- 3 tablespoons of corn flour
Separate the yolks from the whites, mount the whites until stiff. Mix the yolks with the sugar until it is in ointment texture and add the flour, first the wheat flour and then the corn flour, stir with a spatula until it is perfectly integrated. Ingredients (10 servings):
- 1 and 1/4 cup of flour
- 1/4 tsp. of salt
- 1/4 tsp. of baking soda
- 8 cuch. of unsalted butter
- 1/4 cup of brown sugar
- 1 cup of sugar
- 1/4 cup of honey
- 900 g light cream cheese at room temperature
- 1 tsp. of vanilla extract
- 5 large eggs, at room temperature
- 2 tsp ground ginger
- 2 tsp cinnamon powder
- 1 tsp nutmeg, freshly grated
- 1/2 tsp ground clove
- 1/2 tsp of grated lemon peel
To prepare the dough from the base of the cake, mix the flour with the salt, the baking soda, 1 teaspoon of ground ginger, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg and 1/2 teaspoon of clove in a medium bowl and reserve.
Beat 4 tablespoons of softened butter and brown sugar until fluffy. Add 1 egg and beat well. Incorporate 1/4 cup of honey and then the ingredients of the bowl until it is a homogeneous consistency.
Stretch the rectangle-shaped dough approximately 35x25cm and a half cm high on a sheet of non-stick paper. Bake until firm and golden (about 12 minutes). When it cools, break the dough into large pieces and mix with the blender until you get fine crumbs. With this dough the famous gingerbread cookies are made if you shape them with molds before baking, then you can decorate them with glazed or shredded coconut (more coherent).
Put another 4 tablespoons of butter, 1/4 cup of sugar and 2 cups of crumbs in a bowl and knead until the mixture is even. Preheat the oven to 200ºC. Wrap the outside of a 22cm mold with two layers of aluminum foil and cover up to one third of the width with the previous mix. Bake until firm (about 10 minutes) and let cool.
Reduce the temperature of the oven to 175ºC. Beat cream cheese at medium speed for 3 minutes, until fluffy. Add 1/2 cup of sugar and 1/2 teaspoon of vanilla extract and continue whisking. Incorporate the 4 eggs, one by one, beating well and finally a pinch of salt, the rest of the spices and the lemon zest.
Pour the filling over the already cold base and bake it again in the water bath until the cheese is hard (about 50 minutes). When cooling, let it rest in the refrigerator at least 8 hours, before serving. This is one of the most popular Christmas desserts in Europe.
